At the helm of this transformation is Chef Patron, Marc Hardiman, a British-born culinary virtuoso. Hardiman’s creative vision shines through a new, thoughtfully curated menu, set to launch on November 15, which draws inspiration from his personal experiences. Many of the dishes reflect childhood memories, honour traditional family cooking, and feature dairy-free elements, echoing Hardiman’s own journey with lactose intolerance.
